HARVESTING METHOD: by hand and differentiated by single variety

AVERAGE PRODUCTION: 5000-6000 litres of Titone “Valli Trapanesi” PDO oil

OLIVE OIL MILL: the olives, within 6 hours of the harvest, are processed in the company’s oil mill with continuous cycle (2 and a half phases), equipped with a toothed disk crusher and nitrogen plants to work in the absence of oxygen

CERTIFICATIONS: all phases of the organic production are controlled and certified in compliance with the CE Reg. 834/2007 and the CE Reg. 889/2008. The company follows the USDA – NOP standards applied in the USA; CCPB from Bologna is the Italian certification body for the organic farming; it complies with Reg. 510/2006 CEE and with the Certification Control Plan approved by the Ministry of Agricultural, Food and Forestry Policies ” Valli Trapanesi PDO”, controlled by the Chamber of Commerce, Industry, Crafts and Agriculture from Trapani. The company complies with the UNI EN ISO 9001: 2008; CSQA is the certification body

COLOUR: green with golden yellow hints

OLFACTORY: intense notes of walnut husk, green tomato, thistle, pepper, brackish notes

TASTE:  elegant with bitter and spicy in superb balance.

FOOD PAIRING

Tuna tartare with herbs, orange salad, maccu di fave (broad beans), mackerel fillet.
